A moderate India pale takes about two to three weeks from pitch to be ready for next steps in the keg. It then needs about two weeks at room temperature to carbonate. Drink India Pales within three weeks from bottling for a fresh drinking experience. Double, or imperial, IPAs use double or triple the amount of hops in the beer-making process.
